Quality Basics: Understanding Bloom Strength and Gelatin Quality

For buyers new to sourcing gelatin, Bloom strength (gel strength) is one of the first technical indicators worth understanding. It measures the firmness of a gel — specifically, the force a standard probe needs to depress the gel surface without breaking it — and typically ranges from 50 to 300 Bloom depending on the raw material and processing.
A higher Bloom value usually indicates longer collagen chains and fewer impurities, which is why the food, pharmaceutical and health-supplement industries widely treat it as a key quality indicator.
Industry experts note, however, that Bloom should not be the only criterion: viscosity, particle size, moisture content and microbiological safety, together with a verifiable and traceable raw-material source, make up the full quality picture.
